Recipe: Quick and Tasty Pasta

Ingredients;

150g dried pasta (the smaller the pieces the better)
40g butter
2 cloves of garlic finely diced
1 tablespoon of fresh thyme, chopped
Juice of half a lime
Handful of grated parmesan

Serves 2


Begin by preparing the pasta as per the packaging. Then when you drain the pasta get your pan back onto a high heat and add the butter to the pan.

Once the butter has melted add the garlic and fry this for about one minute, then add the thyme and stir it in well. Finally, add the lime juice and stir for about thirty seconds before adding the pasta back in, mixing together well and serving with some grated parmesan.

You can also add some chopped salami, pepperoni or even chorizo at the same time as the garlic if you want some additional flavour.

Ingredients;

200g packet of asparagus tips
100g king/tiger prawns
knob butter
15g parmesan, grated finely
balsamic vinegar

In a small frying pan, add about 2cm deep of water and bring to the boil. Add the asparagus tips and cook for 2 mins.

Drain the water from the pan and add the butter. Once melted, add the prawns to the asparagus and butter, and cook for 2-3 mins max. Overcooked prawns will be tough and chewy and not very nice.

Once cooked, place on a heated plate and top with the parmesan and a drizzle of balsamic vinegar and eat immediately.

Recipe: Turkey stew

Turkey stew with mashed spudsIngredients;

1 knob of butter
1 good lug of olive oil
1 kg turkey thigh meat, diced
1 handful of fresh thyme leaves
1 large leek, chopped
2 sticks of celery, chopped
2 carrots, chopped
1 large sweet potato, diced
1 parsnip, chopped
2 large onions
1 handful of plain flour
1 wineglass of rosé or white wine
1 wineglass of milk
1 wineglass of water
1 small tin of sweetcorn
8 pork sausages

Serves 6-8, can be frozen

Line

Take your Largest Saucepan, and get it on a Low heat, add a good lug of olive oil and a knob of butter.

Next add your turkey meat, fresh thyme, leek, celery, carrots, sweet potato, parsnips, onions and give it about 15 minutes at a simmer, stirring occasionally so nothing sticks.

Get your pan up to a high heat and add a good handful of flour and stir it in, keep stirring for about 2-3 minutes, then add the wine, let it simmer for a minute. Then add the milk and water and stir throughly until all the ingredients combine.

Then bring this to a simmer for about 1 hour or until the leeks and onion have started to break up.

Add the sweetcorn for the last 10 minutes of the hour.

Take your pack of sausages and squeeze all the sausage meat out of the skins. Roll it into a large marble sized balls (wet hands work best). Do this with all the sausage meat and then stir fry them until cooked and add this to the rest of the stew, stirring them in well.

Serve in a bowl with a warm crusty bread roll or some mashed spuds.

Recipe: Pesto

Pesto

Ingredients;

1/2 clove of garlic, finely diced
3 large handfuls of basil
1 handful of lightly toasted pine nuts
1 handful of parmesan, freshly grated
extra virgin olive oil
lemon juice
salt
pepper

Line

Pound the garlic with a pinch of salt and the basil leaves in a pestle and mortar.

Add the pine nuts and pound again.

Next, add half the parmesan. Stir gently and add olive oil – just enough to bind the sauce and get it to an oozy consistency.

Season with salt and pepper to taste.

Add most of the remaining cheese. Pour in some more oil and taste again.

Keep adding a bit more cheese or oil until you are happy with the taste and consistency.

Finally, add a squeeze of lemon juice and you’re done.
